The Albert 1er gourmet restaurant, awarded a Michelin star, is an invitation to awaken all the senses. Damien Leveau, a young, talented and creative chef, brings to life a magical place steeped in a beautiful family history with a strong mountain sensibility, of which Perrine today illustrates the fifth Carrier generation, with commitment and passion.
From the outset, a subtle first impression seduces the eye: a fluid dialogue is established between the natural setting of the Chamonix valley and the hushed elegance of the restaurant. Even before tasting young Damien Leveau's inventive dishes, one appreciates the elegance of the sober, intimate décor, whose palette of colors evokes the Aiguilles de Chamonix. The high mountains, so prominent in the Hameau Albert 1er's surroundings, come to your table. In perfect harmony with this fascinating mineral universe, architect Lionel Adam favors simplicity. For this pure Savoyard, who has designed the new decor for the Albert 1er's Michelin-starred restaurant, "the mountain can be experienced and decoded in many ways: through sport, art, architecture, cuisine... One of the common denominators is risk-taking".
Some of the valley's artisans, wisely chosen by Perrine, enrich the tableware with their creations. These discoveries delight, astonish and amuse, and reinforce the identity and uniqueness of this gourmet interlude offered by the Hameau and its links with the environment.
It's all about focusing on what's essential, in other words, tasting dishes that please both the eye and the taste buds.
Demanding, passionate and daring, chef Damien Leveau offers an inventive cuisine that highlights the qualities of the produce he carefully selects from the Hameau's kitchen garden and its regular producers.
In the dining room, Raquel, maître d'hôtel and perfect ambassador for the chef's cuisine, enthusiastically reports comments and compliments from guests admiring the precision of his cooking, which exacerbates the intensity of his singular combinations of refined flavors.
As for the Hameau Albert 1er wine list, here again, it bears witness to over 120 years of history. Youri Greffe, the star restaurant's young head sommelier, takes his role as guardian of this living heritage to heart, and takes great pleasure in sharing his oenological knowledge with his guests.
At every table, it's the bottle, the winemaker, but also the association with our chef's cuisine, the pleasure and the importance of the moment that is recounted. Here again, the parallels with the mountains are obvious. We propose the 'Sur le Fil' wine pairing by the glass to go with the 'Appel des cimes' tasting menu; then Perrine Carrier tells us about a snow-covered ridge, a roped party, an inking in the face of verticality, a clear and limpid vision of the elements, a search for line and balance...
The QuartzBar, at the entrance to the Albert 1er restaurant, is inspired by the strata formed by the impressive seracs of the glacial falls beneath Mont Blanc. A convivial place to enjoy an aperitif, a coffee or a digestif, it comes alive particularly on evenings between 7 and 10 pm when Perrine lends the Maison's piano to a few visiting artists.
